Keeping your bones strong can be delicious!

swiss chard.jpg This can be a great cold or hot salad. You can even serve it as a snack or accompaniment with your meal. Not only is this beautiful red and green leaf delicious; but it also delivers a nutritional wallop. It's high in vitamin A, C, E, and the elusive vitamin K*. It's a great source of calcium ( for those clever enough to avoid milk), magnesium, iron, and zinc.

Ingredients
1 large bunch of Swiss Chard chopped
3 carrots sliced or diced
Juice of 1/2 lemon
1/2 table spoon of chilli pepper
3 cloves of garlic(pressed)
1/2 tea spoon of cumin
Salt and pepper to taste
Canola oil

Boil carrots and Chard for about 5 mins in a separate pot. Drain and set aside

In a large deep skillet add a bit of canola oil and the 3 large cloves of pressed garlic. Sauté until golden. Add chilli pepper.

Add Chard and carrots to the skillet and cook on low heat. Add salt, pepper, cumin, and the lemon juice. Let it cook for about 5 mins , and stir regularly. Serve it right away or wait and serve it cold. Either way, it's delicious!

* Many people are deficient in vitamin K, because they simply don't eat enough leafy green vegetables. This vitamin is essential in maintaining bone density, so it's important for anyone with a history of osteoporosis in the family.
