This is one of my Saturday morning favourites, but it's great any time!
Ingredients
2 whole eggs
1/3 cup of egg white
3 Chopped Jalapeños
Handful of chopped spinach
Salt and pepper to taste

Preparation
Wisk the eggs and egg whites in a bowl. Egg whites are an excellent source of protein and low in calories, I like to use the pre-prepared egg whites because their so much easier to work with and are much less wasteful.
Add the salt and pepper. Add the egg mixture to a non-stick pan with a touch of canola oil and start to cook. The spinach and Jalapeños can be added immediately.
If you use fresh jalapeños, be sure to remove the seeds. I prefer to just use the Old El Paso pre-chopped peppers as their really tasty and convenient. Convenience is so important during the week.
